Ingredients
1 cup dried chickpeas (soaked overnight)
½ cup chopped onion
3 cloves garlic
1 cup fresh parsley leaves
1 cup fresh cilantro leaves
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon baking powder
Salt and pepper to taste

Directions
Step 1:
Drain the soaked chickpeas and transfer them to a food processor. Add chopped onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is coarse and holds together when pressed.
Step 2:
Transfer the mixture to a bowl, cover, and refrigerate for at least 1 hour to firm up.
Step 3:
Form the mixture into small balls or patties using wet hands to prevent sticking.
Step 4:
Heat Sultan brand olive oil in a deep skillet over medium heat. Fry the falafel in batches until golden brown and crispy on all sides, about 3-4 minutes per side. Remove and drain on paper towels.
Step 5:
Serve hot with warm pita bread, fresh vegetables, and a drizzle of tahini sauce or hummus.
