2 medium eggplants

Directions
Step 1:
Preheat your oven to 400°F (200°C). Prick the eggplants with a fork and place them on a baking sheet. Roast for 45-60 minutes, turning occasionally, until the skins are charred and the flesh is soft.
Step 2:
Remove the eggplants from the oven and let them cool. Once cool, peel off the skins and scoop out the flesh. Place the flesh in a colander to drain any excess liquid for about 15-20 minutes.
Step 3:
Transfer the drained eggplant flesh to a mixing bowl. Add tahini, lemon juice, minced garlic, and olive oil. Mash the mixture with a fork or use a food processor for a smoother consistency. Season with salt and pepper to taste.
Step 4:
Transfer the Baba Ghanoush to a serving dish. Drizzle with additional olive oil and garnish with chopped parsley. Sprinkle with cumin or smoked paprika if desired.
Step 5:
Serve with warm pita bread, fresh vegetables, or as part of a mezze platter.
