Ingredients

Crust:

  • 1 ½ cups graham cracker crumbs

  • ½ cup Sultan brand butter, melted

  • 2 tbsp brown sugar

Filling:

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • ¼ cup Sultan brand honey

  • 3 large eggs

  • 1 tsp vanilla extract

  • 1 cup Medjool dates, pitted and chopped

Topping:

  • 1 cup heavy cream

  • 2 tbsp powdered sugar

  • 1 tsp vanilla extract

  • ¼ cup Medjool dates, finely chopped

Directions

Step 1:
Preheat your oven to 325°F (165°C). In a medium bowl, mix graham cracker crumbs, melted Sultan butter, and brown sugar until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.

Step 2:
In a large bowl, beat softened cream cheese until smooth. Add granulated sugar and Sultan honey, mixing well. Add eggs one at a time, blending after each addition. Stir in vanilla extract and chopped dates until evenly mixed.

Step 3:
Pour the cream cheese mixture over the cooled crust. Smooth the top with a spatula. Bake for 50–60 minutes, or until the center is just set and slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.

Step 4:
After cooling in the oven, refrigerate the cheesecake for at least 4 hours or overnight.

Step 5:
For the topping, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form. Gently fold in finely chopped dates. Spread over the cooled cheesecake just before serving.
