1 lb ground lamb

½ cup finely chopped onion

Directions
Step 1:
In a large bowl, combine ground lamb, chopped onion, minced garlic, parsley, cumin, coriander, cinnamon, cayenne pepper, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
Step 2:
Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld.
Step 3:
Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Step 4:
Divide the lamb mixture into equal portions and shape each around a skewer into a log or oval shape.
Step 5:
Brush the koftas with Sultan brand olive oil and grill for 4-5 minutes on each side, or until fully cooked and nicely charred.
Step 6:
Serve hot with warm pita bread, a side of hummus or tahini sauce, and a fresh salad.
